Making Muffins!

So I made some muffins tonight for the first time and loved them.  I started with Elaine's recipe in Breaking the Vicious Cycle and adapted it a little.  This is my recipe for Apple Walnut Muffins:

2 1/2 cups ground walnuts (buy legal and grind in food processor or blender) (purchased at Trader Joes)
1/2 teaspoon salt
1/2 teaspoon baking soda
2 pureed apples
Add last: Enough legal juice to moisten (about 1/4 cup?) I used a prune juice, but now I'm not sure if the prune juice was legal (just found out Sunsweet Prune Juice is legal so I will use this next time)

Mix all ingredients together and spoon into muffin cups. The muffins don't hold together the greatest, so I definitely suggest using muffin cups. Bake at 400 for about 15-20 minutes.

Some great recipes

I did some cooking over the weekend and want to share some of my favorite recipes. 

My #1 is these Soft Batch Cookies:

They are egg-less and have coconut oil in them, which I love.

Each batch is about 12 cookies. In my second batch I cut the coconut oil in half and they tasted a lot better (and a lot less fat). I also added a little extra almond flour.  I used Bob's Red Mill Blanched Almond Flour (Whole Foods or Kroger) and Raw Creamy Almond Butter (Marantha Brand- also at Kroger and Whole Foods).

I'm not sure why this girl's blog has the name it does, but this recipe was FANTASTIC and very easy.  I will definitely be making it again. 

We also went out to dinner last night to La Tavola in Atlanta and the restaurant made me Baked Striped Bass (with olive oil, salt and pepper only) over a bed of sauteed kale and red onion.  It was amazing. I am going to try to make the kale at home.  I also had a chopped endive and apple salad.  Another great idea that I want to try at home. It looked like they put the endive and apple in a food processor.  I had the salad without dressing, but it would taste great with a little lemon and flax oil on it.

I also made applesauce, jello and we all made fajitas on Friday with sauteed chicken, veggies and guacamole. Everyone else ate it with tortillas and I put it over a salad.

I haven't tried the yogurt again since Friday (after feeling terrible!!) and I am feeling really good.  This is the first day in a long time without and stomach pain (NONE!).  I ordered some dairy-free probiotics and dairy-free yogurt starter so I will try to make almond yogurt next week.  I am also dripping my yogurt and thinking of trying it baked into cheesecake (kills the probiotics) to see if the reaction I had was from the probiotics or the dairy.  I'll keep you updated!

Also, I was just able to do a 16 mile run at the best pace I've done in a long time. It is great to finally being feeling better and all of the chest pain/breathing problems are completely gone!!

SCD Sources in Atlanta

After a cold weekend in Atlanta, I have made it through my first couple days of SCD.  After the mishap with the Lifeway Farmers Cheese I was devastated and in a lot of pain over the weekend. I feel really good today though, exceptionally good considering it's a Monday!

Today's Menu:
1. Breakfast- Scrambled eggs with olive oil and diced tomatoes, glass of carrot, apple, garlic (anti-fungal) juice, half of a banana

2- Lunch: Can of Trader Joe's Albacore- No Salt tuna with Spectrum Organic Mayo, 1/2 cup blueberries, Friendship Dairies Farmers Cheese

3- Dinner: Chicken Soup, Applesauce, roasted zuchinni and yellow squash.

I am going to start compiling a list of where I am buying everything. I found out that the Dekalb County Farmers Market is a GREAT place for SCD'ers in Atlanta to shop.  I spent a little too much money here last weekend but stocked up on Bell & Evans Fresh Chicken, Carrots, Apples, Tangerines, Celery, Spectrum Organic Mayo, butter, Organic Eggs, Friendship Farmers Cheese, blanched almond slices, and some wonderful fresh salmon.  I was especially excited to find the Friendship Farmers Cheese and Bell & Evans Chicken.  I wasn't sure about the chicken but emailed on Sunday and received the following email back:

Yay! That made me really excited. The chicken is a great price.  The market is far from our house, but I hope to make a weekly trip if possible. They have the freshest meat and seafood around.
 
I've also done some shopping at Trader Joes and picked up a few produce items, some frozen seafood (less expensive than fresh, but not as tasty), & canned tuna and salmon. They also have a lot of juice that is legal.

Hopefully I won't find out that any of these products are not legal! I also picked up some almond flour at Whole Foods today (Bob's Red Mill- blanched almonds). I'm hoping to try it this week, but nervous, because I have never had a good experience with nuts!

Day 1 & Day 2: Learning how to SCD

Hey Everyone!

I want to start out by sharing a picture of the snow that landed in Atlanta last night!

Now I want to tell you about my first two days on the SCD diet.  First, I started off earlier this week by placing an order for Breaking the Vicious Cycle by Elaine Gottschall.  The book can be purchased at Barnes & Noble or Amazon.com.  Since I had to wait a few days and wanted to get started on feeling better, I started researching everything I could find online.  I found some great sites that really help when you are new to this diet.  These are my favorites which I have bookmarked and will refer to often:

 (The main SCD site with lots of information on starting the diet and a list of all the "legal" and "illegal" foods)

 (The website of a girl with Crohn's Disease that has used the SCD diet to heal herself.  A valuable source of recipes and lots of great information and tips.  Also a list of popular scd legal brands and where you can buy them.  Her recipes looked delicious! I wanted to try them all the first night...but starting the introductory diet was mandatory.)

After reading up as much as I could about how to get started I headed out to find food. I printed off a list of what to buy from the Austin SCD site:

MY SHOPPING LIST:
1. 2 quarts SCD legal milk and starter for SCD yogurt
2. Chicken (whole or parts) – Buddy’s chickens are available in Austin, are organic and taste great!
3. Carrots
4. Onions
5. Celery
6. Dry Curd Cottage Cheese – Central Market sometimes carries it – ask for "Friendship Dairies Farmer’s Cheese" (or you can substitute dripped SCD Yogurt)
7. Eggs (preferably yard eggs)
8. Welch’s purple Grape Juice or Tropicana Orange Juice (in the carton or jug – not "from concentrate" and not iron fortified) or Apple Cider (no sugars!)
9. Honey (clear as possible) or 'legal' saccharin (read the label - some brands are, some aren't)
10. Unflavored Knox gelatin

11. Fish (from deep sea waters is safest)

12. Lemons (use fresh squeezed juice only)

13. Ground Beef- no fillers

I headed out to Whole Foods as I had seen on the Austin site that in Austin they carry a lot of SCD friendly foods.  I knew I could get organic meat here with no fillers.  At Whole Foods in Sandy Springs, GA I picked up some chicken breasts (bone-in, skin-on), Lifeway Farmers Cheese (took some searching, but it is there!--EDIT: JUST FOUND OUT LIFEWAY FARMERS CHEESE STILL HAS A LOT OF LACTOSE IN IT--DO NOT BUY IT, AFTER WAKING UP THE NEXT DAY FEELING TERRIBLE I DID SOME GOOGLE SEARCHING--NOT LEGAL), Eggs, Celery, onions, carrots and Knox Gelatin.  I then made a quick stop at Publix for some Tropicanan OJ and Welch's 100% Grape Juice. I have been eating the soup, eggs, cheese and Jello for the past 2 days.  It sounds like it will take 3 weeks to see significant improvement. I am trying to stay on the Starter Diet for at least 3 days to calm things down.  I will post more information as I find some SCD friendly foods in Atlanta!

I also need to purchase a few items for my kitchen:  a large pot such as this Oneida one & 9-cup Food Processor.

The Aches & Pains...My Story!

Hey Everyone!

So here's my story: During High School, I started developing stomach and headaches almost daily. My parents took me to numerous doctors who all shook their head and couldn't figure out what was wrong with me--stress, IBS? All of my tests came back normal, but the stomach aches never went away. At this time my parents had also spent a lot of time in Belize so we were all treated for Giardia. I also began to have joint pain, night sweats and lethargy despite adequate sleep. Throughout college, my problems became much worse, until a time I remember when I started eating only salads for every meal. I knew if I added a couple croutons I would be balled up in pain.  I lost a lot of weight and felt amazing. However, this diet could only last for so long (because at some point you have to eat again) and I soon found myself in pain again.

In 2004, I was diagnosed with Celiac Disease by a primary care doctor. I had not been tested for this previously. I took my diagnosis in shock and started the Gluten-Free diet. I had never heard of being intolerant to "gluten".  I researched everything and tried to do everything right. I felt better at first, but then soon some of the symptoms started back. Next I eliminated Casein (as is often recommended with Celiac Disease). Again, I felt better for a short period, but relapsed back into pain. This pattern continued for a number of years until moving to Atlanta and getting married. At this point I had eliminated sugar, dairy, soy, meat, gluten and eggs from my diet. I tried to thrive on just honey, vegetables, fruit and fish.  I actually felt much better but I would struggle on and off with stomach aches and all the other evils whenever I ate anything different (which happened about once a week when I would try a potato or chips).

Then in the Fall of 2009, I was training for a marathon and seeing a Naturopath--hoping to finally get the answers I needed.  I also must add the Naturopath bills were out of control--but if I felt better, it was worth it.  The marathon training (70 miles/week) required more carbs and I started eating a lot of potatoes, sweet potatoes and quinoa.  Additonally, the Naturopath put me on a rice protein powder fortified with a bunch of vitamins and about $200/month of other supplements.  Little did I know all of these things were making me very sick.  I started just eating dinner and starving all day because I knew if I ate anything during the day I would develop terrible stomach and head pain and brain fog and couldn't do my work or training run. 

During 2009, I also started suffering from bouts of dizziness, sore throats, difficulty staying asleep, body aches, cuts in the corners of my lips and this terrible problem where I couldn't get a deep breath.  My mom was also having the same breathing problem.  We thought it was too coincidental to be something like a lung or heart problem and she had everything tested.  We were shocked when my mom was diagnosed with GERD and a narrowing trachea from years of reflux.  The breathing problem was the straw that broke the camel's back for me. I could abstain from food all day and was still able to train and get my work done, but the breathing problem put a serious hamper on my running and life.  I wasn't going to live with it nor was I going to take the drugs from the doctor that I had taken in the past. I was done with medical doctors & I was hungry!!  In 10 years doctors had not fixed the problem, despite doing everything they said to a "T".

The Naturopath had also done a test of the pH in my stomach and said my stomach was not acidic enough.  Nothing made sense--too much acid or too little?  The best answer that I did get from the Naturopath was that I had a yeast overgrowth problem...ugh. "It's really, really high," is what he told me. They wanted me to go on a no carb diet (no fruit even!).  I couldn't do it. How was I going to train for a marathon with ZERO carbs for energy? I took the supplements he gave me and broke out like crazy from what he called detox. I had terrible cystic sores all over my forehead, upper leg, back and neck.  Never in my life had I developed acne on my legs, neck or back! I developed rashes everywhere and deep cuts in the corner of my lips that lasted for a month (I had struggled with these previously--apparently caused by yeast).  This was on top of the $300/month I was spending on taking supplements (for the yeast, thyroid support, iodine (tested low), protein powder, probiotics, estrogen support, magnesium (tested low), B vitamins (tested low), cod liver oil and a multi vitamin. The Naturopath had a list of about 10 other supplements he wanted me to take, but there was NO way we could afford anymore.

 That Fall, my sister-in-law was diagnosed with Crohn's disease and I had heard of the SCD Diet from a friend who's dad had used it to heal from Crohn's after many years of medicine and surgeries. As I researched the diet for her I was shocked to see that it could help with Celiac Disease and other intestinal problems. I wondered if I should try this diet...but put it off because I couldn't imagine eating eggs, cheese and meat again (however it sounded tasty) and I didn't have Crohn's disease like many of the other blogs of people I read on the diet. Then one night, I was home and in complete pain and frustrated about my breathing problem since I had just returned from a failed run.  I decided to research the diet some more and stumbled upon the Austin SCD Friends website:  http://www.austinscdfriends.com/page/page/3689765.htm. I almost cried when I read Kay's story describing how she had Celiac Disease and the same breathing problems (narrowing esophagus) and how SCD has put her symptoms in remission. Her whole life story in her 50's sounded like mine in my 20's. I decided I was going to give this diet a try with the hope that FINALLY I could find an answer and live a semi-normal life. The best part of this diet was that I could actually add foods back to my diet! No more starving hopefully!  I couldn't wait to eat breakfast and lunch again. :)  I started the diet the next day. My next post will describe my first day which went great!
