Making Muffins!

So I made some muffins tonight for the first time and loved them.  I started with Elaine's recipe in Breaking the Vicious Cycle and adapted it a little.  This is my recipe for Apple Walnut Muffins:

2 1/2 cups ground walnuts (buy legal and grind in food processor or blender) (purchased at Trader Joes)
1/2 teaspoon salt
1/2 teaspoon baking soda
2 pureed apples
Add last: Enough legal juice to moisten (about 1/4 cup?) I used a prune juice, but now I'm not sure if the prune juice was legal (just found out Sunsweet Prune Juice is legal so I will use this next time)

Mix all ingredients together and spoon into muffin cups. The muffins don't hold together the greatest, so I definitely suggest using muffin cups. Bake at 400 for about 15-20 minutes.

congrats on qualifing for boston. - what is Legal Juice? I think I will make these muffins

LOL, hey! I am apparently terrible at keeping a blog. "legal" juice is juice that has absolutely no sugar or other ingredients added. There are basically three--welch's 100% grape juice, sunsweet prune juice and tropicana OJ. Have you tried almond flour yet?? It's great!! The backed goods are heavy, but the flavor is awesome.
