Some great recipes

I did some cooking over the weekend and want to share some of my favorite recipes. 

My #1 is these Soft Batch Cookies:

They are egg-less and have coconut oil in them, which I love.

Each batch is about 12 cookies. In my second batch I cut the coconut oil in half and they tasted a lot better (and a lot less fat). I also added a little extra almond flour.  I used Bob's Red Mill Blanched Almond Flour (Whole Foods or Kroger) and Raw Creamy Almond Butter (Marantha Brand- also at Kroger and Whole Foods).

I'm not sure why this girl's blog has the name it does, but this recipe was FANTASTIC and very easy.  I will definitely be making it again. 

We also went out to dinner last night to La Tavola in Atlanta and the restaurant made me Baked Striped Bass (with olive oil, salt and pepper only) over a bed of sauteed kale and red onion.  It was amazing. I am going to try to make the kale at home.  I also had a chopped endive and apple salad.  Another great idea that I want to try at home. It looked like they put the endive and apple in a food processor.  I had the salad without dressing, but it would taste great with a little lemon and flax oil on it.

I also made applesauce, jello and we all made fajitas on Friday with sauteed chicken, veggies and guacamole. Everyone else ate it with tortillas and I put it over a salad.

I haven't tried the yogurt again since Friday (after feeling terrible!!) and I am feeling really good.  This is the first day in a long time without and stomach pain (NONE!).  I ordered some dairy-free probiotics and dairy-free yogurt starter so I will try to make almond yogurt next week.  I am also dripping my yogurt and thinking of trying it baked into cheesecake (kills the probiotics) to see if the reaction I had was from the probiotics or the dairy.  I'll keep you updated!

Also, I was just able to do a 16 mile run at the best pace I've done in a long time. It is great to finally being feeling better and all of the chest pain/breathing problems are completely gone!!
